Ingredients
Tuscan Seafood Stew
- 1 onion roughly chop
- 5 cloves garlic roughly chop
- 1/4 cup parsley
- 1/2 tsp red pepper flakes
- ½ teaspoon dried paprika
- 2-3 tbsp olive oil
- 3 tbsp tomato sauce
- 1 cup water
- 5 cherry tomatoes, diced in half
- 1 cup fish or vegetable stock
- Salt and ground black pepper to taste
- 1 lb. mixed seafood (shrimp, calamari, salmon and prawns)
- 2 tbsp fresh lemon juice
- Sliced bread for serving
Directions
Tuscan Seafood Stew
- Cut the onion on a cutting board very finely and mince the garlic.
- In a large stockpot, heat the oil over medium heat.
- Add the chopped onion and minced garlic. Cook, stirring frequently until the onions are translucent.
- Stir in the chili flakes and dried paprika powder.
- Add the tomato sauce, and stir, cooking for 1 minute.
- Stir in the mixed seafood and cook for another 2-3 minutes.
- Add the water, scraping off any bites from the bottom of the pot. Bring to a boil and reduce to a simmer until the water has almost entirely evaporated.
- Add the diced cherry tomatoes along with the vegetable stock and season with salt and pepper to taste. Bring to a simmer, cover and simmer for 10 minutes.
- Stir in lemon juice and serve in a nice serving dish with fresh lemon and slices of bread.
